Citrus is something I always have plenty of. Here in Southern California it is just a wonderful treat and a fruit I can get year around. I do not believe I ever have to get it from the Market. Between my own tree's and my neighbor's it is like liquid gold in them there hills!

The one thing I am doing this wonderful day is dehydrating some fruit. I do this for many different reason's. I like to put the dehydrated slices into my water it is good for me and the flavor mingles and lingers for the day! Pus when they have been dried out they are

Great for cooking soups and many a meal
Now this is an easy task that can be done the old fashion way with some cheese cloth and a cookie sheet outside.
Or like myself with a dehydrator . Well either way the task is easy. Get your citrus and wash it well and dry it. Get a cutting board and a sharp knife. Have an extra large bowl for ends and left over you can squeeze for juice. It is always good to have a couple of spare towels. I have a shit load of old washcloths and towels out in the garage.

Let us get started once your itrus is clean you can start to slice. THis topic could get quite detailed as I do not wate so much as a seed when I do citrus. At the end of this post I will list my Citrus stuff with links.
So the best thing to do is always have your tools and area ready. Glove up I always wear gloves so no "stuff" end's up on my slices. Ok make your slices as thin as possible. Place them on your dehydrator never stack.
This is a picture of the lime I did. Do not worry about the juice and do not dry them out on paper towel (waste of paper towel) and the juice stay's in the slices.
The time it takes to dry the slices is really dependent on your style or type of dehydrator. I always wait till they are dry to the touch. I leave them overnight to make sure because sometimes they feel dry but after the heat stops they get a bit sticky to the touch. Not ready in that case.
Once dried I put them in small jar's or size appropriate and seal they need to be kept away from moisture or any way for them to reacquire that moisture. The little bag on my lap in the picture I was taking to Oaktown for the kiddies!
